Do you dip?
No, silly, not THAT kind of dip. Yuck! (If you live around “good ol’ boys, you know what I mean. If you don’t, well…sorry you’re missing out on the good ol’ boys, but be glad you’re NOT experiencing their dipping.)
I mean the good kind. This kind. This dipping oil that is so chock full of fresh herbal fragrance and flavor it’ll make you wanta’ slap yo’ momma. (That’s another one of those Southern thangs, ya’ll.)
Meaning, you may just forget about sharing with anyone else at the table.
Pair this with a loaf of really crusty sourdough bread and you’ve made yourself a little heaven here on Earth.
That might be a bit of a hyperbole. But not much!
While the herbs are busting their britches growing and producing, I take advantage of them and make up batches of this Parmesan Dipping Oil and a variety of pestos which I freeze. Unfortunately, the dipping oil herbs don’t freeze well as they are. The herb blend will keep several days in the refrigerator if you cover them with olive oil and cover tightly.
When fresh herbs are not available, you can substitute dried herbs in the amounts shown.
Notes
We like to add a good amount of freshly cracked black pepper to the parmesan, herb and oil mixture.
Ingredients
Herb Blend
- 1 tablespoon coarsely chopped Genovese basil
- 1 tablespoon chopped flat-leaf parsley
- 1 tablespoon minced garlic
- 1 teaspoon dried thyme (1 Tablespoon fresh)
- 1 teaspoon dried oregano (1 Tablespoon fresh)
- 1 teaspoon freshly cracked black pepper
- 1⁄2 teaspoon kosher salt
- 1⁄2 teaspoon olive oil
Dipping Oil
- 2 -3 Tablespoons freshly grated Parmesan
- 1/4 cup good quality olive oil
Instructions
Herb Blend
- Combine all ingredients in a blender or food processor. Pulse 3-4 quick bursts until all ingredients are well combined.
- Store, covered, in the refrigerator until ready to use.
Dipping Oil
- On a small plate, combine 1-2 teaspoons of the herb blend with the Parmesan and olive oil.
- Add additional pepper, Parmesan or oil as desired.
- Serve with warm, crusty bread (preferably Italian baguette).
This herb dip looks delicious and I bet it tastes as good as it looks. I love fresh herbs (basil is my favorite) so I would love to make this one day. I’m about to pin it for the future 🙂
