It’s all about peaches and other COOL stuff.
It’s hot, y’all. I’m not sure where you are, but in Arkansas, is hanging around with a vengeance. It’s been in the 90s all week with no real hint of fall.
And we won’t EVEN talk about humidity.
Oh my gosh. You know I’m a summer, heat-loving person, but this has been a wonderful time for the air conditioning to be working full force even for me!
And I’m really wishing for fall to make its appearance before winter sets in!
When it’s hot like this, who wants to cook? Not me, for sure. Not only do I not have the energy, we just don’t have the appetite for much heaviness either. This salad works so well as a light lunch or dinner.
I look forward all year to our summer tomatoes and peaches. Y’all, if you’ve not ever had Arkansas tomatoes and peaches, I hurt for ya’! They are simply the very best anywhere.
Paired with Riceland rice and a light, refreshing lime vinaigrette, this salad is definitely one of our favorites and is sure to become one of yours as well.
