You won’t believe this bread. You really won’t. Especially when I tell you it’s made from ice cream.
Yep. I said ICE. CREAM. It has to be good, right?
This is not a recipe original to me, but when I came across it, I said,”Whaaaaaat?” And knew I was going to give it a shot. Just 2 ingredients are all that are required. I added a third, just because….
And, y’all, it worked!
Think about it. Ice cream. Eggs, cream, flavoring. Self-rising flour has all that’s needed for the body and rising. I’m no chemist (Hubby was in his former life, so he tried to explain it, but … y’all…)
I used black walnut ice cream because I just happen to like black walnut ice cream, but you can use any flavor(s) you desire. The original recipe suggests using a combination of strawberry and peanut butter ice creams which results in a bread that tastes similar to a peanut butter and jelly sandwich. I’m definitely gonna’ give that a try.
The bread mixture goes together in a flash and bakes up fairly quickly. It’s not too sweet, and I think the right combination could actually make a fun bread for a sandwich. I was thinking the Black Walnut Ice Cream Bread I made would make a tasty addition to a chicken salad sandwich. Chocolate with peanut butter? The possibilities are endless.
Let the kids in on the action. My grandchildren and one of their friends recently tried out this idea, each choosing their own flavors: chocolate for Perfect Boy, mint chip for Perfect Girl an vanilla for Sweet Friend. The chocolate was a real favorite while Perfect Girls decided she would have liked hers better if it had been mint chocolate chip. The vanilla variety was the least favorite with all of us thinking it definitely needed some additional flavor boost.

Seriously, give this a try. It’d be a great fun time with your kiddos. But it’ll be great fun for just you too!

This made a terrific breakfast bread. I toasted the slices with a little butter before toasting. Because it wasn't especially sweet, it was a nice way to start our day.
Ingredients
- 1 pint full-fat ice cream, any flavor, softened (I used black walnut.)
- 1 1/2 cups self-rising flour (I used White Lily.)
- Whatever additions you want, if any. (I used 1/2 cup chopped black walnuts.)
Instructions
- In a medium bowl, allow ice cream to soften.
- With a spatula, mix in 1 1/2 cups self-rising flour until batter is smooth.
- Pour into a greased loaf pan.
- Bake at 350 degrees for 25 to 30 minutes.
- Cool on a wire rack before slicing.
