A truly enjoyable sponsored recipe post I recently did for Riceland Foods is this Brown Rice Salad with Cumin-Lime Vinaigrette. It’s delicious with any grilled meats, but we also like it alongside tacos and fajitas. We’ve enjoyed it several times over the summer, but it is not just a seasonal salad.
Actually, it’s filling enough for me to be my meal. It’s light and bright which makes it perfect for a luncheon plate.
I used Riceland’s Long-Grain Brown Rice, but you could also use their new Premium Boil-n-Bag Whole Grain Brown Rice available online. Plus, I bet you have most, if not all, of the remaining ingredients in the pantry. Don’t you just love it when you don’t have to run to the grocery in order to complete a dish? Even though Hubs says I live at the grocery (which may or may not be true, y’all), there are times when I just don’t want to make that little trip.
My grandmothers are rolling over in their graves with that statement:) My maternal grandmother never went to the grocery —not even to buy a loaf of bread — until after my grandfather died. He did all the grocery shopping because he was the one who knew how to drive. Nonnie also taught herself to drive after he died. That’s a story!
My Mamaw raised just about everything they ate. She never learned to drive, nor did my Papaw. They both walked wherever they went for the most part. Like Nonnie they raised most of what they ate.
Both were amazing cooks though. Perhaps it was from them I inherited my love of cooking and gardening, ya’ think?
