Everybody needs a good vinaigrette recipe in their hip pocket. Nothing could be easier to make, and the ingredients are almost always on hand. I play around with the basic idea, varying it with different vinegars, mustards, herbs and, sometimes, a little something sweet. And that’s how this Orange Ya Glad Vinaigrette came about.
A simple vinaigrette is a thing of beauty. Grab a bowl or a jar, whisk or shake together oil and vinegar, toss in a pinch of salt and cracked pepper and even the most boring lettuce springs to life. But it’s not just for lettuce. Veggies go from bland to bold with just a little drizzle. Use it as a lively marinade for meats.
And it might take you all of 5 – 10 minutes to pull it all together.
I just love the way this Orange Ya Glad Vinaigrette compliments the spiciness of a baby spinach and arugula mix. Nothing else is needed unless you wanted to sprinkle on some freshly shaved parmesan. So simple. So, so good!

Dressing can be made 2 days ahead. Cover tightly and chill. Bring to room temperature before serving
Ingredients
- 1 small garlic cloves, finely minced
- 1 small shallot, finely minced
- 4 tablespoons white balsamic vinegar
- 1 heaping Tablespoon Dijon mustard
- 1 cup extra virgin olive oil
- 1 heaping teaspoon sweet orange marmalade
- Kosher salt and freshly ground black pepper
Instructions
- In a pint jar with lid, stir together garlic, shallot, vinegar and mustard.
- Gradually stir in oil and marmalade; season with salt and pepper to taste.
- Place lid on jar and shake vigorously until ingredients are emulsified.
