radish salad

I love this time of the year when the early vegetables and herbs begin to come alive in the garden. Each day I try to incorporate whatever I can from our small raised garden beds which often times leads to some pretty interesting combinations. This salad, for example. How easy can you get than slicing up a bunch of radishes, green onions and basil? But do you ever have a recipe just miss the mark?

The idea for this came from a trip we made to Little Cayman for a scuba diving adventure. The owner/hostess of the resort where we stayed for the week was a Cordon Bleu trained chef, Gladys. Knowing that she was such an expert, cookbook author, chef and all, I couldn’t wait to try this simple salad with my fresh-from-the-garden ingredients.

Well, folks, sometimes recipes just don’t click the A+ button for us. And this one didn’t. I sounded good. It was pretty to look at. I love all of the ingredients. But if was only just fair and I was disappointed. And I was none too happy that my precious garden ingredients were used in a way that didn’t flatter them. Hubby was gentle in his remarks, but I could tell that he, too, wasn’t a big fan. So this one will go down in the “needs improvement” file.

I’d love your opinions for doing just that.

Have you ever had a recipe failure? Did you just chunk it or did you go about to setting it right?

Radish-Basil Salad

Ingredients
  1. 4 packages radishes or equivalent in fresh
  2. 1 bunch green onions
  3. 1/2 cup fresh basil (I used Genovese.)
  4. 4 Tablespoons red wine vinegar
  5. 2 Tablespoons Dijon mustard
  6. 1/3 cup olive oil
Instructions
  1. Wash, trim and thinly slice radishes.
  2. In a food processor, chop the onions and basil, add the vinegar and mustard, and slowly add oil through the feed tube. (I didn't use the food processor. I just chopped and whisked.)
  3. Pour over the radishes.
  4. Toss and chill. (The flavor did improve after several hours in the frig.)
Notes
  1. I think this recipe has potential. I'm just not quite sure what to do to it to make it tastier. I'd really love your ideas. I'll give them a try (or post a link on this post) to what you did to improve it.
