Sweet Potato Chips with Lime Zest

Serves 5
Ingredients
- 4 limes
- 1 pound sweet potato, peeled
- 1 teaspoon sea salt
- 3 cups canola oil
Instructions
- Finely zest limes and combine the zest with the sea salt.
- Finely slice the sweet potato with a mandoline, food processor or vegetable peeler.
- Heat the oil in a heavy skillet or deep fryers to 375 degrees.
- Fry the potato slices in the hot oil until they are lightly browned and the bubbling has stopped, about 1 minute.
- Drain on paper towels and sprinkle with the lime salt.

I don’t fry much anymore (more for mess reasons than health, although both count), but I may have to try this! Sounds amazing! This is one of the things my scary mandolin is super good at.

Oooh I’m gonna try this. Love the idea of lime salt with sweet potatoes. And I’ve been making a new healthy dill dip this would be great with.
