Sometimes you just need quick and easy, right? And delicious.
I made this Easy Buffalo Cauliflower with Blue Cheese Dipping Sauce recently for a gathering at our house. I needed something that was veggie based for the non-meat eaters in the group and took a chance that this simple appetizer would fill that need. It was somewhat risky since not everyone is a cauliflower lover like I am.
To my delight and surprise, there wasn’t a smidgen left on the plate when the evening was over. That suggests success, don’t you think.
While you can make your own Buffalo sauce and blue cheese dipping sauce from scratch, I didn’t. I made use of those already prepared ones from the market. I suggest Frank’s Red Hot Buffalo Wing Sauce and and Virginia’s Very Blue Cheese Dressing. I added some additional crumbled blue cheese to the dressing as another flavor layer. If you’re not a blue cheese lover, ranch dressing would be a suitable substitute.
Ingredients
- 1 medium cauliflower, trimmed and cut into bite-sized pieces
- 2 Tablespoons unsalted butter, melted
- 2 Tablespoons olive oil
- 1/4 cup water
- 1 teaspoon garlic powder
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon cracked black pepper
- Frank's Red Hot Buffalo Wing Sauce
- Virginia's Very Blue Cheese Dressing
- Crumbled blue cheese
- chopped chives, as garnish
Instructions
Roasted Cauliflower
- Preheat oven to 400 degrees.
- Trim and cut cauliflower into bite-sized pieces; set aside
- In a large ziplock bag, place melted butter, olive oil, water, garlic powder, salt and pepper. Add in cauliflower pieces and massage to cover.
- Spread the cauliflower evenly on a large baking sheet. Bake for 15 minutes, flipping once .
- Remove cauliflower from oven and pour a good amount of Buffalo sauce over all, stirring well to cover.
- Place back in the oven and bake for about 25 minutes longer, until the cauliflower is crispy and tender. Flip once during cooking.
- Remove from oven and allow to sit 5-10 minutes prior to serving. Plate and garnish with chopped chives.
- Serve with blue cheese dipping sauce.
Blue Cheese Dipping Sauce
- Combine 1 cup prepared blue cheese dressing with 1/4 cup crumbled blue cheese; set aside.
