When Hubby and I were newlyweds we lived in an area with limited restaurant availability at best. On Sunday, it was pretty much impossible to find one open so Sunday lunch needed to be something I could prepare ahead, cook quickly or cook while we were in church. Heaven help us if the preacher happened to be extra long winded that day!
This Chicken and Rice Casserole was one of our standby recipes. On our limited budget, we needed ingredients that were easily available and pretty darn cheap. This dish fit both of those. Plus, it cooked in the oven while we were at church. It was not only delicious, but it was comfort food which was especially welcomed during the winter months.
