Brinner. It’s what’s for dinner at our house.
Sometimes we are just in the mood for a real dished up breakfast for dinner. We seldom eat large breakfasts in the morning, preferring fruit and yogurt, bagels or steel-cut oats for the most part. But occasionally, we do like to splurge on a big breakfast menu for the evening meal, especially during the cooler months. While February is known as National Hot Breakfast Month, I see no reason whatsoever that we can’t continue that in March, do you?
Recently, I was given the opportunity to review several typical breakfast food mixes from Krusteaz, a Continental Mills brand. Since I was already familiar with several of their products, I agreed and have been enjoying experimenting. You just knew I would, right?
Belgian Waffles
Even though it’s been around for quite awhile, chicken and waffles seems to be appearing on just about every restaurant menu in one form or another so that’s what I chose to make with the Krusteaz Light & Crispy Belgian Waffle Mix. Only, I wanted not just plain ole Belgian waffles; I wanted jazzed up Belgian waffles. Well, of course.
I did take the short cut of using deli chicken tenders which worked fine, but I’m sure they would have even been better had I chosen to make them from scratch. I used some hot Buffalo Wing Sauce I had in the pantry with a little added honey as a basting sauce for the tenders. I have used Carla Hall’s Nashville Hot Chicken recipe in the past for chicken and waffles. If you like spicy, you’ll love this!
Waffle Recipe
Using the Krusteaz mix as the basis for my waffles, here’s what I did:
Notes
I use a scant 1/3 cup batter per waffle with my waffle iron.
Start with a thicker batter and thin as needed.
Ingredients
- 3 cups Krusteaz Belgian Waffle Mix
- 1/3 cup blue cornmeal
- 1 1/2 cups water
- 2 eggs
- 1/3 cup canola oil
- 1 tablespoon finely minced fresh jalapeno
- 1 tablespoon chives, finely chopped
- 1/2 teaspoon freshly cracked black pepper
- 1/2 teaspoon ground chipotle pepper
Instructions
- Heat and lightly grease Belgian or conventional waffle iron.
- In medium bowl, whisk together Krusteaz Belgian Waffle Mix, water. eggs, oil, jalapeno and spices.
- Allow batter to rest at least 30 minutes in the refrigerator.
- Remove batter from refrigerator and stir gently.
- Pour batter onto prepared waffle iron.
- Cook waffles 3-4 minutes until golden brown, or according to waffle iron directions.
- Serve with crispy fried or hot fried chicken with warmed pure maple syrup.
The waffles were not as crisp as I would have preferred, but I really think it had to do with my waffle iron rather than the mix. I’ve been looking around at reviews for a new one so if you have a recommendation, I’d love to hear from you.
Pancakes
Except for the addition of blueberries and pecans to the Krusteaz Light & Fluffy Buttermilk Pancake Mix, I really didn’t change anything. Hubby likes thicker, fluffier pancakes so I did add some additional mix to the basic recipe to make his come out thicker. At our house, we generally start with a basic pancake batter because everyone has his or her preferred addition.
For the grands, we not only have lots of dark and semisweet chocolate chips and blueberries to add, we also make artistic statements which typically take the form of butterflies or Teddy bears. The easiest way to do that is with a plastic squeeze bottle (think picnic bottle dispenser). Krusteaz provided me with a large one that I am planning on using for Easter weekend breakfast with the Perfect Ones. They’ll love creating their own pancake art, and I’ll love not having pancake batter all over places where it shouldn’t be.
Sometimes you take the easy way out and make it tons of fun, right?

they used to have a cranberry orange muffin mix that I always felt like was so “fancy” when we took it places bc it came with crystallized sugar to put on top. But, I love their gluten free brownie mix ….I’d love to try some more options!
