It’s been crazy busy at our house lately. And sickly to boot! Not to complain (honest), but I’m ready for some hang-around-for-awhile warm days. I really have been recipe developing and kinda’ sorta’ cooking for Hubs and me (again…honest). Here’s a look at some of what I’ve been up to lately.
I love working with Arkansas-based Riceland Foods. This farmer-owned coop is the world’s largest largest miller and marketer of rice and one of the Mid-South’s major soybean processors. Riceland products are sold in over 75 countries around the world and, of course, nationwide.
This Heart-Healthy Beef Stroganoff is a real tummy pleaser. It has a deeply rich broth with chunks of tender sirloin and mushrooms. Served over Riceland Long-Grain White Rice, this will be a dish your family will ask for time and time again.
Then there was this. Oh my goodness. Do not wait around until the next Mardi Gras season to make up a batch of this Mardi Gras Gumbo Dip. It chock full of crawfish, shrimp and tons and TONS of flavor. Make this for your next get-together and you’ll be the most popular person there.
Surely by now you know how much I love, love this Taramahoota Pollo Sopa con Arroz. You know that recipe my friend Liz shared several years ago? This is it, and now you can have it too. When I prepared it for my school buddies back in the day BR (before retirement), they scarfed it up and some have made it themselves at home. It’s that good. Trust me.
I made these cuties for a Christmastime post, but you could easily adapt them for any time of the year. St. Patrick’s Day and Easter are coming up soon. These White Chocolate Crispy Rice Balls would be such fun to do with your kiddos. I bet you could come up with some creative decorations for them for sure.
Rice is so versatile. I eat it for breakfast, lunch or dinner. Or, even in desserts, of course. This Baked AcornSquash with Warm Rice Stuffing can be a meal in and of itself. Even half is way more than either Hubs or I can eat as a side dish. I really think this would be a great stuffing for bell peppers or zucchini as well. Isn’t it pretty?
And here’s one of the first dishes that turned my duck-hunting Hubby into an actual duck-eating Hubby. Duck Fried Rice is absolutely delicious, y’all. If you can’t get your hands on wild duck, you can certainly use domestic duck. Heck. You could even use chicken!
You might say it’s a good thing I love rice! Which, of course, I do y’all.
