Hubby’s an avid duck hunter but up until a couple of years ago, he wasn’t an avid duck eater. That all changed however when I began preparing this Duck Fried Rice I prepared for the Riceland Foods blog. Now he looks forward to having it for dinner and even hints around for it when it’s not been on the menu for a bit.
To paraphrase Forrest Gump, “Ducks and rice go together like peas and carrots.” At least, I’m sure he would’ve said that if his momma had fed him anything besides chocolates. And while shrimp and rice go together quite nicely and in a variety of preparations, I just know Forrest and Bubba would much prefer this Duck Fried Rice. Trust me.
Don’t stress if you don’t have any wild duck breasts handy. You can easily prepared this with domestic duck, venison or even chicken. I strongly encourage you to use the buttermilk marinade with whichever one you choose. It adds a lot to the overall flavor of the dish.
