This week I’ll be sharing some of my favorite ways to use strawberries. Arkansas strawberries are beyond delicious, and that is definitely a fact. It seems that I wait all year just to pop that first red jewel in my mouth. Straight out in the field if I can get to one nearby. In fact, I am so particular about them that the ONLY time I make Fresh Strawberry Pie is when I can get my hands on fresh Arkansas strawberries.
I fully realize that not all of you live in Arkansas so if you decide to make this pie, just get yourself to the nearest Farmers Market or local U Pick Em farm and get yourself some berries straight out of the field. It’s not something I fool around with. Trust me.
And this Balsamic Strawberries with Whipped Mascarpone Cheese is just the easiest and one of the best ways to gobble up th ose fresh berries as well. Yes, balsamic vinegar. Reducing the vinegar intensifies the sweetness and gives this dish a unique and vibrant taste. You will just love it, I know. Try the balsamic berries over ice cream for another simple dessert.
With the fresh greens coming on in our garden, I’ll definitely be making this Strawberry Spinach and Arugula Salad with Strawberry Vinaigrette very soon. Look for a similar version that includes hubby’s smoked chicken on THV 11 This Morning on Tuesday. So, so easy, light and delicious.
