Traditional Egg Custard Pie |

My Never Fail Pie Crust (makes 3 large pie crusts) The dough freezes very well.
Ingredients
- 4 eggs, slightly beaten
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 2 1/2 cups whole milk, scalded
- 1/2 teaspoon freshly grated nutmeg
- freshly grated nutmeg for the top
- 1 9-inch unbaked pie shell
Instructions
- Preheat the oven to 350 degrees.
- Scald the milk on the stovetop or microwave. Blend together the eggs, sugar, salt 1/2 teaspoon of nutmeg (or more), and vanilla. Gradually whisk the egg mixture into the scalded milk. (I use a 4-cup measuring cup which makes it easy to pour the filling into the crust.)
- Place the crust onto a middle oven rack. Gradually pour the pie filling into the crust. Sprinkle the top with freshly grated nutmeg.
- Bake at 350 degrees for approximately 35 minutes. The edges will be firm, but the center will remain somewhat “jiggly.” Allow to cool completely on a wire rack before serving.

I don’t thing I’ve ever eaten egg-custard pie, and it looks soooooooo GOOD
This is the first pie I ever learned to make. My mom made it so many times while I was growing up. I love it to this day. Many times she would make it without a crust. I must make this soon, it’s been too long.
Thom’s been wanting me to make an egg custard pie. His mom used to make it for him {pressure, much?}.
Scalding? Is that when it gets a skin on top of it?
