My friend and co-worker, Misti, makes this beautiful dish each uear for the faculty. She serves it in a candy cane shaped dish (can we say “envy”), and it is always gone quickly. I’ll be making it again this year for our Christmas Eve family time. I just know you will love it as much as well do. It’s so easy and can be prepared ahead of time which is always a good thing.
Misti's Marinated Cheese

Ingredients
- 1/2 cup olive oil
- 1/2 cup white wine vinegar
- 3 Tablespoons. chopped fresh parsley
- 3 Tablespoons. minced scallions
- 1 teaspoon. sugar
- 3/4 teaspoon. dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon blackpepper
- 3 garlic cloves (or 3 teaspoons. of minced garlic in the jar)
- 2 ounces pimento, drained
- 1 block cheddar cheese (cut both down the middle and alternate the cheeses)
- 1 8-ounce black cream cheese
Instructions
- Cit 1/4-inch squares of both cheeses; stack together, alternating cheeses.
- Combine all ingredients and shake well; pour over cheeses and marinate overnight.
- Serve with Ritz or other favorite crackers.
Notes
- At Christmas, I like to stack the cheeses in the shape of a candy cane. If you have a candy cane shaped serving dish, use that.
