SWEET POTATO COCONUT CURRY WITH SHRIMP
Yield : 6 SERVINGS
Ingredients
- 1 tbsp olive or extra virgin coconut oil
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1 tbsp minced ginger root
- 1 cup lower-salt vegetable broth
- 2 sweet potatoes, peeled and cut into 1-inch cubes
- 2 tsp Thai green curry paste
- 1 tbsp freshly squeezed lime juice
- ½ cup coconut milk
- 1 lb medium shrimp, cooked, peeled and deveined
- ¼ cup toasted slivered almonds, optional (Try to find the ones with the skin on.)
- ¼ cup finely chopped cilantro leaves
Works in slow cookers from 3½ to 6 quarts.
This dish can be partially prepared before it is cooked. Complete Step 1. Cover and refrigerate overnight or for up to 2 days. When you’re ready to cook, continue with Steps 2 and 3.

I’m a big fan of recipes that you can make in steps, this one looks awesome!
I am so shy at using curry, though I love it. I have to sort of sneak it in and barely, or my husband won’t like it. So, I wait until he is out of town and go heavy on the curry. Once I had curried mac and cheese and it was the best ever. I have never been able to reproduce it.
