Being the true Southern girl that I am, I love chicken and dressing. It is, of course, dressing — not stuffing. My Nonnie always made the absolute best chicken and dressing. It was a community favorite. I liked it warm or cold — didnβt matter. She never had a recipe to my knowledge.
The next best chicken and dressing maker would have to be my Aunt Sue, the youngest of Nonnieβs daughters. Hers was always the star attraction at family gatherings, especially at Deer Camp Sunday. (That would be the Sunday preceding the opening day of deer season around here.) In fact, she would make at least two batches so there would be enough to go around. Her batches were probably about the size of a #2 washtub!
My sister, Becky, does a decent dressing as well. Not quite as good as Aunt Sueβs. That may just be my imagination, however. Sheβll probably kill me for saying that! (Perhaps you shouldnβt tell her that I said that.) The talent of making dressing never fell to me unfortunately. As much as I like to cook, go figure! I never really tried very hard knowing full well that I could usually get my craving fixed by making sure to end up with Aunt Sueβs leftovers.
That all changed not too long ago when I discovered this slow cooker version. Each year at my school prior to Christmas break, the teachers potluck together for several days with what we call βMerry, Merry Munchies.β We have some great cooks there, so none of us goes hungry!
Mrs. Parkerβs contribution that year was this delicious Crock Pot Chicken and Dressing that was so tasty I almost missed out on it entirely because those closest to the teacherβs lounge got theirs first. (You donβt get much farther away than my classroom. Thatβs normally a good thing, I suppose.) I did manage to scrape the bottom of the crock and decided that this was the solution to my dressing impairment.
Hereβs her recipe with a few of my minor changes:
Ingredients
- 1 8-inch pan of prepared cornbread
- 8 slices white bread, dried in oven
- 3 stalks celery, chopped
- 1 medium onion, chopped
- 1 1/2 - 2 teaspoons ground sage
- 1 teaspoon salt
- 1 teaspoons freshly cracked black pepper
- 1 32-ounce container unsalted chicken stock
- 4 eggs, beaten
- 2 10.5-ounce cans cream of chicken soup
- 2 hard-boiled eggs, chopped
- cooked chicken, as desired
- Butter
Instructions
- Butter the inside of a 5 or 6-quart slow cooker.
- In a very large bowl, crumble cornbread with white bread.
- Stir in salt, pepper, sage, celery and onion; mix well.
- Add in chicken stock (or broth), beaten eggs and cream of chicken soup. Stir together well.
- Finally, stir in hard-boiled eggs and cooked chicken.
- Place slices of butter on top as desired.
- Cook 2-3 hours on HIGH or 4-5 hours on LOW.
- Fluff with a fork; let rest 15 minutes before serving.
You will need to check this for the desired consistency. You can add more broth if needed. Stir about half way through the cooking time so that the outside edges do not overcook. (Remember to turn the crock in order to avoid those hot spots.)I leave the chicken in good size pieces because Hubby likes it better that way.

After reading all of these delicious recipes you’ve been posting, I may just have to break down and buy another crock pot one of these days.
My mother is always the dressing maker for our big family Thanksgiving dinner in Camden–usually attended by about 75 folks. She doesn’t use a recipe either.
I do not cook much anymore, but your suggestions and recipes make me hungry. This really easy and good. Thanks fro sharing and leaving me a nice comment.

I do own a crock pot but don’t know of one single meal I have cooked in it. Every time I read a good recipe like this I think…I’m going to do it! And then I don’t. I need to be like that little engine that could…I think I can, I think I can…

What an interesting recipe. I’m amazed at how much liquid is used, but I’m guessing it’s all absorbed. This is a recipe that can make life much easier.

And, what did you mean about tipping the crockpot at the end to brown the top?

That sounds wonderful! I’ve tried a crockpot chicken & stuffing (yes, stuffing, LOL) dinner a couple of different ways, but all involved boxed stuffing. This looks SO much better! π

I’ve been looking for some good crock pot recipes! I linked up my recipe this week. I think a few alterations can be made to it to make it a warm salad that is cooked in a crock pot instead of boiled/simmered on the stovetop. π

Debbie, this chicken and dressing recipe looks great. I’ve never thought of making it in a crock pot but will definitely try this! I grew up in the South and I totally agree with you about the fact that it’s “dressing”, not “stuffing”. LOL
