My friend and co-worker, Misti, makes this beautiful dish each uear for the faculty.  She serves it in a candy cane shaped dish (can we say “envy”), and it is always gone quickly.  I’ll be making it again this year for our Christmas Eve family time.  I just know you will love it as much as well do.  It’s so easy and can be prepared ahead of time which is always a good thing.

Misti’s Marinated Cheese

Ingredients:

1/2 cup olive oil
1/2 cup white wine vinegar
3 Tablespoons. chopped fresh parsley
3 Tablespoons. minced scallions
1 teaspoon. sugar
3/4 teaspoon. dried basil
1/2 teaspoon salt
1/2 teaspoon blackpepper
3 garlic cloves (or 3 teaspoons. of minced garlic in the jar)
2 ounces pimento, drained
1 block cheddar cheese (cut both cheeses down the middle and alternate the cheeses)
1 8-ounce block cream cheese

Directions: 

Cut 1/4-inch squares of both cheeses; stack together, alternating cheeses.
Combine all ingredients and shake well; pour over cheeses and marinate overnight.
Serve with Ritz or other favorite crackers.
