This is an easy side dish to make in the slow cooker. It goes well with a variety of main entrees and generally pleases all.
2 pounds frozen corn kernels
2 Tablespoons butter, cubed
2 poblano chile peppers, chopped or l large green bell pepper and 1 jalapeno pepper, seeded and finely chopped
1 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
3 ounces cream cheese, cubed
1 cup (4 ounces) shredded sharp Cheddar cheese
Coat the slow cooker with nonstick cooking spray. Add all ingredients except cream cheese and Cheddar cheese. Cover. Cook on HIGH 2 hours. Add cheeses; stir to blend. Cover and cook 15 minutes more or until cheeses melt.

I’m submitting my pulled pork sandwiches. I’m terrified of drying out pork so I usually cook it in the slow cooker. This comes out really juicy and able to shred easily! Perfect for summer BBQ dinners!
I think I may have to break down and buy another crock pot. Had a party for 40 here Saturday night for a young couple getting married. We served comfort food and used a recipe from Trisha Yearwood’s new cookbook for mac and cheese made in the crock pot. Delicious and easy.
