sugared nuts


Sugared Nuts
2 cups nut meats of your choice
1 cup sugar
1/2 cup water
Warm the nut meats slightly in a large saucepan.

Combine the sugar and water in another pan and cook, stirring constantly, until the sugar is completely dissolved.  Continue cooking until the syrup reaches 238 degrees or until a little syrup dropped into a cup of cold water forms a soft ball which flattens when taken from the heat.


Remove the syrup from the heat and pour over the warmed nuts.  Shake the pan vigorously until all of the nuts are completely and evenly covered.


Pour nuts onto waxed paper or silpat to cool completely before storing in an airtight container.
These are good served as is.  I keep them on hand throughout the year to use in salads and as a garnish for a variety of dishes.
