You won’t believe how easy this little tidbit is.  Nor can you imagine just how good it is either.  But it truly is both of those.  Easy and delicious.


There’s really not much cooking involved at all, and most of that can be done well ahead of your party.  Plus, it can all be assembled except for the drizzle of honey and walnuts several hours ahead as well.

I also love that it uses some of my very favorite flavors — Arkansas peaches, Petit Jean bacon, local farmer’s market goat cheese and walnuts, Fisher honey and my homegrown basil.  Me?  I buy the baguettes for the bruschetta at my local grocery, but feel free to bake it yourself if you choose.  Oh.  And invite me over to taste test when you do.  Thank you very much.

Bruschetta of Arkansas Peaches, Bacon, Goat Cheese with Honey-Walnut Drizzle

Ingredients
  1. 2 small baguettes (approx. 6 ounces each)
  2. unsalted butter or olive oil
  3. 1 pound peppered or plain hickory smoked, thick-sliced bacon
  4. 4-5 fresh peaches, cut into thin slices, unpeeled
  5. large, fresh basil leaves. washed and dried
  6. goat cheese, at room temperature
  7. 3/4 – 1 cup honey
  8. 1 1/2 cups toasted walnuts, coarsely chopped
  9. Freshly cracked black pepper, if desired
Instructions
  1. Cut the bacon slices into thirds and cook until crisp. (I like to do this in the oven.) Drain on paper towels and set aside.
  2. Slice the baguettes into 1/2 inch diagonal slices; set aside. To make the toasts, brush each side of the bread slices with a little olive oil or melted butter. Grill being sure to get nicely toasted grill marks on each side.
  3. Mix the honey and walnuts; set aside.
  4. To assemble: Place one slice of bacon on each toast. Top the bacon with a large basil leaf, and a slice of peach. Garnish with slightly less than a teaspoonful of the softened goat cheese.
  5. Drizzle with the honey-walnut mixture shortly before serving.
  6. Sprinkle with a little of the freshly cracked black pepper, if desired. Try these with and without the pepper to see which was you prefer
Notes
  1. Note: I sometimes use a tiny bit of goat cheese to anchor the basil and peach slices atop the bacon.
