If you joined in the test taking for my recent post, I’m sure you have been “waiting on pins and needles” for those correct answers. Thanks to those of you who left comments or sent your responses via email. Well, here’s the key. Just how Southern are you?

A real belle:
1. calls the refrigerator the icebox.
2. even if she’s ninety, calls her father Daddy.”
3. would rather walk down Fifth Avenue naked than wear white shoes before Easter of after Labor Day.
4. refers to a handbag as a pocketbook.
5. doesn’t have a couch, she has a sofa.
6. drinks iced tea (probably sweet tea) in the middle of a blizzard.
7. will march for women’s rights for twenty miles but would die rather than walk two feet with a lighted cigarette.
8. dyes her shoes to match her cocktail dress.
9. will always have themes for her parties. (Think Sandra Lee here.)
10. has a deviled egg plate. (Hope you didn’t miss this one for sure since we have already had this little discussion!)

I’m thinking most of you did well until #9? I especially liked Kathy’s (of Life in the Slow Lane) answer: “cucumber sandwiches.’” How many of us have attended bridal parties and baby showers where one of the main items served was those little round cucumber sandwiches served on white bread rounds with REAL butter? Ladies’ social events in the South definitely would not be the same without them! For those unfamiliar with this delightful treat, or for those who have forgotten about them in these fast-paced days of ours, here’s my favorite recipes that is somewhat nontraditional. It is, of course, from the mother magazine of all Southern Belles – Southern Living. Mary Lynn’s answer of cheese straws was right on target as well. We will definitely have to take a look at that recipe very soon. Hubby complains that the ones I buy just don’t measure up to my homemade ones. Bless his little heart!

Cucumber Sandwiches
1 8-ounce package cream cheese, softened
1/3 cup mayonnaise
20 very thinly sliced white sandwich bread slices (such as Pepperidge Farm)
20 very thinly sliced wheat bread sandwich bread slices (PF)
1 large cucumber, finely shredded and patted very dry
2 teaspoons grated onion
1/4 teaspoon garlic salt
1/2 – 1 teaspoon chopped fresh dill, optional

Process cream cheese and mayonnaise in blender or food processor until smooth, stopping once to scrape down the sides. Cut crusts from bread. Combine cheese mixture, cucumber, onion, garlic salt and dill. Thinly spread cucumber mixture onto white bread slices and top with wheat bread. Cut sandwiches in half diagonally. Store in an airtight container up to one hour before serving. Yield 40 sandwiches.

Note: You can cut the bread into small (2-inch, approximately) rounds if you prefer. You will be able to make a few more sandwiches. Do not cut these in half.
