One of my favorite Arkansas companies is Petit Jean Meats located in Morrilton, and I am excited to be serving as a member of their brand ambassador program, The Blue Diamond Club.  This Monday I will be appearing on KATV, Channel 7 in Little Rock along with Misty Wilbanks of PJM, showcasing how to use leftover ham in a variety of ways.  Ham? It’s What’s On the Menu will feature recipes from several other Blue Diamond Club members as well.  I will be making one of our long-time family favorites, Peppered Ham Salad.

Family owned since it first opened in the late 1920s, the company is the only privately owned red-meat processor still operating in the state. Since September 2011 it has also been one of the official sponsors of the Dallas Cowboys football team (owned by an Arkansan, by the way) which opened up its market in Texas.  Also, Petit Jean Grillers are the official ham of the University of Arkansas (UA)  Razorbacks in Fayetteville, as well as the University of Central Arkansas Bears, the University of Arkansas at Little Rock Trojans, and the Arkansas State University Red Wolves.  Talk about the motherlode of sports teams!

David Ruff and his son Edward operate Petit Jean Meats (Morrilton Packing Company) today. The company purchases trimmed pork from major packers across the United States and then smokes and packages it. The smoking process takes place in climate-controlled smokehouses using real hickory wood rather than the more commonly used liquid smoke. . The company ships meat all over the country, although most of its customers live within a seventy-five-mile radius of Morrilton.
