Hubby is pretty easy to please and adventurous when it comes to food.  (Yes, I know I am lucky.)  I know he won’t eat liver, so I don’t even think about going there even though I happen to really like it most of the time.  It only took him 30 years to tell me that he didn’t like mushrooms.  I’m not quite sure what he did with those gazillion mushrooms that I put into practically  EVERYTHING all those years.  But he makes no bones about it when it comes to this ham salad.  He loves, loves, loves it.  Really.

And it could not be any simpler to make.

I use to make it just about every time that I baked a ham.  But let me digress a moment.

When we were first married, like the second week or so, I decided to bake a ham— or at least a ham shank, but it was a big one.  It was just about the same size that we always had at home, so I just figured we could eat on it for a good while.  Hubs really enjoyed that first evening’s ham meal with au gratin potatoes and green beans.  He even chowed down on the grilled ham and cheese sandwich that came around for supper #2.  But when supper #3 brought ham and eggs, let’s just say that there was no marital bliss that evening.

It was a long time before I baked another ham.

Back to the ham salad.  Hubby grew more tolerant of baked ham, and I learned not to buy such a big one.  However, when it appeared that there were going to still be leftovers, I began making this ham salad and all was right with the world. 

 These days I don’t often bake a ham since it’s just the two of us at home.  I  usually turn to Petit Jean Meats sliced ham instead which gives us “just enough.”  It’s what I use now to make this ham salad dish as well.  A pound of their sliced ham makes just the perfect amount of ham salad, and Hubby doesn’t even have to wait for leftovers.

We serve this as a salad on top of mixed salad greens or as a sandwich.  It makes a super late-night snack on crackers as well. 

I wonder how it would taste with mushrooms?

Hubby's Favorite Ham Salad

Ingredients
  1. 1 one pound package Petit Jean Meats sliced ham
  2. 3 hard boiled eggs
  3. 2-3 Tablespoons dill or sweet pickle relish (your preference)
  4. 3-4 Tablespoons mayonnaise
Instructions
  1. Using a food processor, coarsely grind the ham.
  2. Add in the hard boiled eggs and pulse briefly just to combine.
  3. Stir in the desired amount of pickle relish and mayonnaise to suit your tastes.
Notes
  1. Hubby generally prefers the dill pickle relish, but he will eat it either way. We aren't really big on lots of mayonnaise, but add in whatever amount suits your fancy.
