Okay.  Confess. You love a good potato chip as much as I do. I know you you do. But, if you’re like me, you really do try to limit the amount of that love because it has a weighty way of loving you right back.  If you know what I mean.
These sweet potato chips with lime salt are a little bit of a concession to not eating those tortilla chips that I might otherwise grab.  Yes, they are healthier but I eat them mostly because they are just so darn good.  I especially like them served with Judy’s Hummus, Tri-Colored Salsa or Lisa’s Salsa — or maybe all three!  Can’t say that I care for them so much with cheese dip though.

Sweet Potato Chips with Lime Zest

Ingredients
  1. 4 limes
  2. 1 pound sweet potato, peeled
  3. 1 teaspoon sea salt
  4. 3 cups canola oil
Instructions
  1. Finely zest limes and combine the zest with the sea salt.
  2. Finely slice the sweet potato with a mandoline, food processor or vegetable peeler.
  3. Heat the oil in a heavy skillet or deep fryers to 375 degrees.
  4. Fry the potato slices in the hot oil until they are lightly browned and the bubbling has stopped, about 1 minute.
  5. Drain on paper towels and sprinkle with the lime salt.
